Laurent and Catherine Klepka have 5.8 hectares of family vineyards in the village of Oger. This is a Grand Cru village, and the vineyards are planted to Chardonnay. Laurent’s great grandparents, Fernand and Jean, were both winemakers. They had bought some property in Oger, owned a press and some tanks, but still lacked the resources to operate a full scale winery, and reached out to his neighbours about the idea of pulling resources. This vision was realized a few years later, when their daughter, Yvonne, along with husband, Raymond, joined with other growers in Oger to create “Co-Operators.” Founded in 1946, the organization was named Les Grappes d’or (the golden bunches). Yvonne and Raymond’s daughter, Andree, along with her husband, Jean-Claude Klepka, committed themselves to this idea as well. Their son, Laurent is raised in this mindset, and completing his viticultural school, he leaves for a six month internship in the US in 1992. As of 2009, Laurent and Catherine run the entire operation. Laurent is the president of the Co-op.
Klepka-Sausse practices sustainable viticulture and has done since the 1990’s. In 2019 the estate received two important certifications: High Environmental Value & Sustainable Viticulture in Champagne.
Pream ‘Bulle Grand Cru Oger
100% Chardonnay,and vinified in stainless steel tanks, this wine is comprised of 70% from the release year, and 30% reserve wines. It is aged on the lees for 3 years. The dosage is 8 grams of sugar per liter. The Pream ‘bulle is all about freshness. This wine is floral, citrusy, mineral-driven, minty, chalky, yet creamy, and soft around the edges. The winery offers salmon tartare with avocado and green apple jelly, marinated salmon with lemon and dill, sea bream and hazelnut oil, and more.
Alliance Rubis Grand Cru Brut Rose Oger
86% Chardonnay and 14% Pinot noir, the base wine is 68% from the release year and 32% reserve wines. Vinified in stainless steel, the wine is aged on the lees for 3 years. The dosage is 8 grams per liter. This rose combines, vibrancy, body, elegance, and fruitiness. Both golden and red cherries, along with strawberries, and quince are the primary fruits. The winery suggested grilled prawns, thin sliced charcuterie, vegetable lasagna, and more.
Mille Or Grand Cru Brut Oger
This is a vintage wine, from 100% Chardonnay, vinified in stainless steel tanks, and aged for 7 years on the lees. The dosage is just 7 grams per liter. This is floral, nutty, with stone fruit and oranges, with buttered brioche. The bubbles are very fine, and the minerality is profound, creating a wine of very complexity and sophistication. The winery suggests cod with smoked salt parmesan gnocchi and green asparagus, roasted fillet of sole with peas, Aged Comte cheese, and more.
